Seeking for mild taste of sake
Meimon Sakai is a brewery merged from the three breweries south of Yoshida town. Originally、they made sake as an offering to the Emperor. Now they make sake with fresh water gushing out from Misho town、south of Uwajima city.
Uwajima is a core city in the southern part of Ehime. It was under the reign of Date clan departed from General Date Masamune in Sendai city till the last days of the Tokugawa Shogunate. During turbulent social conditions of those days、 one man from Uwajima city played a vital role in the political world. He was Date Munehiro who carried out drastic reforms from the Tokugawa Shogunate to the Meiji Restoration. Uwajima is in the end of Shikoku island but the small city produced great people with an enterprising spirit. Mild climate makes it possible to get delicious food from land and sea. The climate makes people so sweet and kind.
Mr.Matsui、an owner of the brewery is 47 years old. Although he had been unrelated to a brewing industry until quite recently、by a chance、he happened to start a brewing business. He was born and brought up in Uwajima city. That is why his love for local sake is so deep.
He took violin lessons when he was a child. Now playing the violin is one of his hobbies. ( I think that kind of hobby is something upper-class people do...Ooops! I don't mean he is not one of them.) His artistic sense may have an influence on his making of sake. He seeks for mild sake that women would love to enjoy drinking casually. He talks in a kindly manner during an interview. He seems to have a delicate sensibility to understand women's mind. He is a man far from an image that I have for breweries' managers in Shikoku.( Do I speak his personality too well? Ha!)
